For all you former pasta lovers out there:
Spaghetti Squash with Bison Ragu (time in kitchen = 30)
2 tomatoes
3 – 4 roasted red peppers
1/4-1/2 cup fresh basil (roughly chopped)
1/4 cup olive oil
1 onion (finely chopped)
1 pound ground bison (or whatever)
1 spaghetti squash
Cut tomatoes in half or fourths and put them in a food processor or blendor with roasted red peppers and basil, until the sauce reaches desired texture.
Warm the olive oil in pan. Add onion and saute 2 minutes. Add garlic. Add bison. Cook 4 – 5 minutes until bison is lightly browned but shill slightly pink. Add tomato puree. Turn heat up and simmer rapidly for 10 minutes.
While sauce is simmering, cut spaghetti squash in half and scoop out seeds and stringy pulp. Microwave each half 6 – 8 minutes, until soft. Scrape out noodle-like inside with a fork, drizzle with olive oil, and serve with bison ragu on top.

I’d use lard or coconut oil (or even butter) instead of olive oil. I’ve found just cooking the squash and adding the olive oil (plus some basalmic vinegar and other spices) once it’s served and in the bowl is enough for me.

Just found myself a local store that sells Kosher Grass fed/Grass finished beef!! Happy camper. Got some almond butter and coconut oil too. 😀

For people who live close-ish to the gym, Union Market on 7th Ave. between 12th & 13th St. often has grass-fed meat…but not every time, so you’ve got to roll the dice.
and sometimes they sell regular meat that they claim is grass fed at least that was one man’s opinion
